Gluten-Free Culinary Arts Schools

Gluten is found in wheat and certain other grains and can be a problem for individuals with gluten intolerance, or celiac disease. By avoiding food items that contain gluten it is possible to lead a symptom-free life. However, many food products, especially bread, contain gluten. To learn how to cook gluten-free, take a gluten-free cooking or baking class at a local culinary institute. Many institutes offer gluten-free courses as part of their public or continuing-education courses.

Culinary Institute of America

    The Culinary Institute of America at Hyde Park, N.Y., offers a course in gluten-free baking. Learn how to make all types of cookies, pizza, pies, brownies, pastries, yeast breads and pies completely gluten-free. The recipes used come directly from the "Gluten-Free Baking" cookbook by Chef Richard Coppedge. The cost of this one-day Saturday course is $250 as of February 2011.

Midwest Culinary Institute

    The Midwest Culinary Institute at Cincinnati State Technical and Community College offers "Creations" cooking classes. This series includes the class "Dinner Party, Gluten-Free!" Learn how to create and make four dinner courses, all gluten-free. This course is for beginning cooks. The cost is $75 as of February 2011 and the evening class lasts for three hours.

Oregon Culinary Institute

    The Oregon Culinary Institute in Portland offers a gluten-free weekend cooking class through its partner the Portland Culinary Workshop. Learn how different flours work in baking and how to adapt normal recipes to become gluten-free. Make gluten-free pasta, crackers and bread. Cost of this course is $65. Check with Portland Culinary Workshop for class schedule.

National Gourmet Institute

    The National Gourmet Institute offers three different gluten-free classes in its public classes, within its health-supportive cooking and specialty classes. All classes are hands-on and you will learn all about gluten-free cooking based on the class topic. Two gluten-free classes focus on gluten-free bread, including "Gluten Freedom: Reclaiming Our Daily Bread" and "More Gluten Freedom: Reclaiming Our Daily Bread." Also learn all about gluten-free cake baking and decorating with the "Art of Baking & Decorating Vegan, Gluten-Free and Soy-Free Mini Cakes."
